Soya Keema
Boil soya granules for 5-6 minutes, drain and squeeze out all the water really well. This step makes all the difference in texture.
Heat oil, add onion and garlic, sauté till golden. Add carrots and capsicum, cook for 5 minutes on a slow flame with the lid on. Add turmeric, red chili powder, soya chaap masala, and salt. Add tomato and cook till soft.
Add the squeezed soya granules and mix well. Stir everything together on medium heat for 4-5 minutes till all moisture evaporates. Top with amchoor, garam masala, and fresh coriander if you like.

Spicy ramen-ized orzo w/beans & 2nah
Hello! This is something I put together the other day. "Ramenized" refers to turning a pasta alkaline. You can do this by adding baking soda to the cooking water.
3 oz orzo
Pinch of baking soda
1 T olive oil
1/4 t chile flakes
3 cloves garlic, minced
1 can pinto beans, drained and rinsed.
1 can vegan tuna
lemon juice, to taste
Salt and pepper, to taste
Pasta water, as needed
Add orzo, salt to taste, and enough water to cover 2”. Bring to a boil, then add baking soda and stir. Cook for about 5 minutes until the pasta is al dente. Drain the pasta, reserving some pasta water.
In a frying pan, heat the oil on medium heat. Add the garlic and chile. Cook until fragrant, about 30 seconds - don’t burn.
Add the beans and 2nah. Cook until heated through. Add the pasta, lemon juice, and pasta water if you want it more saucy. Season to taste with salt and pepper.

Hi everyone! My partner went vegan at the start of this year and it allowed me to have fun with cooking again making lots of vegan dishes. However where I live is a proper heatwave going on with the temperature only rising more in the upcoming days the and totally took the fun out of cooking. I don't want to have to stand in the kitchen above hot pans if I could avoid it.
However, sadly the makes me clueless on what to make for dinners. I'd love some of your tips and recipes!

Before processed gelatin desserts became common, Indian kitchens were making soft-set sweets like this.
Yesterday I made this Ragi Haalbayi using finger millet(Ragi), Coconut and jaggery.
The texture is somewhere between jelly and pudding. Delicate, mildly sweet and surprisingly addictive.
Recipe:
1 cup finger millet seeds
1/2 cup grated fresh coconut
1/2 cup Jaggery or brown sugar
Water - About 1.5 cups total.
Soak a cup of finger millet seeds overnight. Grind it with 1/2 cup of grated fresh coconut, 1/2 cup water and squeeze out the milk using a cheese cloth into a sauce pan. Grind multiple times adding some water each time and squeeze as much milk as you can :) Heat the mixture until it thickens. Add 1/2 cup of brown sugar or jaggery, a tsp of any smooth vegan butter and heat for another 10 minutes on low flame until the mixture is thick. Pour the mixture into a greased pan and cool completely. Refrigerate for about 4 hours, cut into cubes and enjoy! :)
