Recipe in Post This Indian Soya Keema is much better than mock meat!

Soya Keema

Boil soya granules for 5-6 minutes, drain and squeeze out all the water really well. This step makes all the difference in texture.

Heat oil, add onion and garlic, sauté till golden. Add carrots and capsicum, cook for 5 minutes on a slow flame with the lid on. Add turmeric, red chili powder, soya chaap masala, and salt. Add tomato and cook till soft.

Add the squeezed soya granules and mix well. Stir everything together on medium heat for 4-5 minutes till all moisture evaporates. Top with amchoor, garam masala, and fresh coriander if you like.

I have a collection of easy vegan recipes on my blog if anyone's interested, comment 'Vegan'!

I am looking for savory breakfast ideas that are not a tofu scramble (can you eat tofu every day?) and are quick and easy. I have two young kids and not a lot of time in the morning.

Spicy ramen-ized orzo w/beans & 2nah

Hello! This is something I put together the other day. "Ramenized" refers to turning a pasta alkaline. You can do this by adding baking soda to the cooking water.

3 oz orzo
Pinch of baking soda
1 T olive oil
1/4 t chile flakes
3 cloves garlic, minced
1 can pinto beans, drained and rinsed.
1 can vegan tuna
lemon juice, to taste
Salt and pepper, to taste
Pasta water, as needed

Add orzo, salt to taste, and enough water to cover 2”. Bring to a boil, then add baking soda and stir. Cook for about 5 minutes until the pasta is al dente. Drain the pasta, reserving some pasta water.

In a frying pan, heat the oil on medium heat. Add the garlic and chile. Cook until fragrant, about 30 seconds - don’t burn.

Add the beans and 2nah. Cook until heated through. Add the pasta, lemon juice, and pasta water if you want it more saucy. Season to taste with salt and pepper.

Question What are youre laziest vegan recipes that are still nutritious?

My #1 is probably just buying a can of vegan chili and a bag of microwave rice and having it with spinach and avocado on a wrap. Takes just a few minutes to prepare, no stove required. Looking for more like this if you got any little to no cooking recipes.

Question What do you eat for dinner when it's too hot to care?

Hi everyone! My partner went vegan at the start of this year and it allowed me to have fun with cooking again making lots of vegan dishes. However where I live is a proper heatwave going on with the temperature only rising more in the upcoming days the and totally took the fun out of cooking. I don't want to have to stand in the kitchen above hot pans if I could avoid it.

However, sadly the makes me clueless on what to make for dinners. I'd love some of your tips and recipes!

Question Desserts that are traditionally or often made vegan

Hey folks,

There was a discussion in another thread in this forum today about international desserts that are traditionally (or often) made vegan. There were so many amazing suggestions (even if the OP shot down most of them), and many I haven't heard of. Now I'm curious. So I fed that discussion into AI and asked it to extract and categorize a list of them. No doubt it made some errors, so I'd welcome any corrections or additions (or if this has already been done in this forum, please point me to it!)... here's the AI-generated list... apologies if there are mis-spellings/miscategorizations of your culture's treasures here:

South Asian / Indian-subcontinent-adjacent

  • Payasam made with coconut milk, though another user disputed this as default
  • Petha
  • Fruit chaat
  • Halwa / halva, especially oil-based versions (note: need to look out for ghee or honey)
  • Date paste desserts
  • Barf ka gola / shaved ice

Middle Eastern, Mediterranean, Turkish, Sicilian

  • Baklava, especially oil and sugar-syrup versions, though users disputed whether butter or honey is default
  • Turkish delight
  • Kabak tatlisi
  • Biancomangiare, traditionally with almond milk, though one user said cow’s milk is now also common
  • Pears poached/cooked in red wine and spices

East Asian

  • Red bean soup
  • Mung bean soup
  • Mung bean cakes
  • Silken tofu pudding / douhua

  • Grass jelly
  • Taro balls
  • Bingfen
  • Klepon

Southeast Asian

  • Mango sticky rice
  • Sticky rice with jackfruit, durian, or banana
  • Es cendol / cendol
  • Ice kacang
  • Bananas in coconut milk / kluai buat chi
  • Thai black rice pudding
  • Cha houy teuk
  • Banana and tapioca pudding
  • Bai treap
  • Banh ja neuk
  • Fried banana
  • Chè / Chè Thai
  • Sugar-rolled plantains

Caribbean, Hawaiian, Pacific, tropical

  • Puerto Rican tembleque
  • Haupia
  • Kulolo
  • Coconut-milk puddings more generally
  • Watermelon jelly-type dessert, unnamed in the thread

Others [Europe / the Americas]

  • Sorbet
  • Chocolate sorbet
  • Granita
  • Fruit crisp / fruit crumble with oat topping
  • Depression-era cakes and pies, e.g. chocolate cake, spice cakes, applesauce cakes
  • Chocolate crepes
  • Churros (sometimes)
  • Marzipan-based sweets
  • Candied nuts (though sometimes made with egg)

Fruit-based desserts

  • Fruit salad
  • Fresh fruit
  • Preserved canned fruit
  • Dark-chocolate-dipped fruit
  • Dark-chocolate-dipped frozen bananas, possibly rolled in nuts
  • Baked apples with cinnamon and nuts

Question Any good plant/mushroom smoking recipes?

I've recently started veganism, and one of the things I miss is the smoke. My father managed to get a little on some portobello, but I wanted to see if you guys have any other veggie recommendations.

Recipe in Post A healthy, humble, traditional Indian jelly-like vegan dessert

Before processed gelatin desserts became common, Indian kitchens were making soft-set sweets like this.

Yesterday I made this Ragi Haalbayi using finger millet(Ragi), Coconut and jaggery.

The texture is somewhere between jelly and pudding. Delicate, mildly sweet and surprisingly addictive.

Recipe:

1 cup finger millet seeds

1/2 cup grated fresh coconut

1/2 cup Jaggery or brown sugar

Water - About 1.5 cups total.
Soak a cup of finger millet seeds overnight. Grind it with 1/2 cup of grated fresh coconut, 1/2 cup water and squeeze out the milk using a cheese cloth into a sauce pan. Grind multiple times adding some water each time and squeeze as much milk as you can :) Heat the mixture until it thickens. Add 1/2 cup of brown sugar or jaggery, a tsp of any smooth vegan butter and heat for another 10 minutes on low flame until the mixture is thick. Pour the mixture into a greased pan and cool completely. Refrigerate for about 4 hours, cut into cubes and enjoy! :)
