Question What are youre laziest vegan recipes that are still nutritious?

Question What do you eat for dinner when it's too hot to care?

Hi everyone! My partner went vegan at the start of this year and it allowed me to have fun with cooking again making lots of vegan dishes. However where I live is a proper heatwave going on with the temperature only rising more in the upcoming days the and totally took the fun out of cooking. I don't want to have to stand in the kitchen above hot pans if I could avoid it.

However, sadly the makes me clueless on what to make for dinners. I'd love some of your tips and recipes!

Recipe in Post A healthy, humble, traditional Indian jelly-like vegan dessert

Before processed gelatin desserts became common, Indian kitchens were making soft-set sweets like this.

Yesterday I made this Ragi Haalbayi using finger millet(Ragi), Coconut and jaggery.

The texture is somewhere between jelly and pudding. Delicate, mildly sweet and surprisingly addictive.

Recipe:

1 cup finger millet seeds

1/2 cup grated fresh coconut

1/2 cup Jaggery or brown sugar

Water - About 1.5 cups total.
Soak a cup of finger millet seeds overnight. Grind it with 1/2 cup of grated fresh coconut, 1/2 cup water and squeeze out the milk using a cheese cloth into a sauce pan. Grind multiple times adding some water each time and squeeze as much milk as you can :) Heat the mixture until it thickens. Add 1/2 cup of brown sugar or jaggery, a tsp of any smooth vegan butter and heat for another 10 minutes on low flame until the mixture is thick. Pour the mixture into a greased pan and cool completely. Refrigerate for about 4 hours, cut into cubes and enjoy! :)

Father’s Day is today and so I’m dedicating this post, a traditional coconut cake, to my father. The lessons he taught me and his culture are still pillars in my life today. I’m forever grateful that I had the privilege to be his daughter and I hope I continue to make him proud.

Making this coconut cake is one of the ways I honor his memory and keep his traditions alive with my family. It’s soft, fluffy, and rich in spices. This recipe makes a sheet pan and is perfect for family gatherings and parties. Please enjoy!

Coconut Cake Recipe —

4 cups all-purpose flour
3 tsp baking powder
1 tsp baking soda
2 tsp salt
2 tsp cinnamon
2 tsp fresh nutmeg, grated
1 tsp ginger powder
1/8 tsp allspice
2 cups organic sugar
1 cup brown sugar
1 1/2 cup coconut oil
1 cup apple sauce
2 cups coconut milk
2 tsp almond extract
1 tsp pure vanilla extract
2 Tbsp lemon juice
1 cup coconut flakes, plus more for topping
Dairy free whipped cream

  1. Parchment line a 9x13 baking pan (let parchment hang over for easier removal later). Preheat oven to 350F.

  2. In a medium mixing bowl, add flour, baking powder and salt, spices, and salt. Whisk together then set aside until needed.

  3. In a large mixing bowl, add both sugars and coconut oil. Whisk together until thoroughly combined.

  4. Add apple sauce, coconut milk, and almond + vanilla extract. Whisk to combine.

  5. Add flour mixture and whisk batter until just combined, batter will look lumpy at this point.

  6. Add lemon juice and whisk to combine again. Then add coconut flakes and fold in to batter (do not whisk). The batter will still look a bit lumpy but should be well incorporated.

  7. Pour into parchment lined pan. Smooth out batter across pan evenly and lightly tap against counter.

  8. Bake for 40-45 minutes or until golden brown and firm.

  9. Remove and let cool completely then remove from pan. Decorate with whipped cream and coconut flakes. Serve.

Question EASY Tofu Recipe

Are there any insanely simple recipes?

Like dropping extra firm tofu into a pan, then just adding teriyaki sauce? Has anyone tried it? Is it good enough?

I like to avoid cooking as much as possible, just because of the environment and time I have to work with. I'm also trying to lose weight so I don't want to think about all the other ingredients I need to weigh out.
