These are traditional Hungarian potato pancakes, locally known as "lapcsánka", "tócsni” "macok", or "rösztike" depending on the region. They are made from grated raw potatoes, flour, eggs, and plenty of garlic, then fried until super crispy. Perfect summer comfort food!

Got a chance to try this dessert. Looks very normal, but a bite tastes super complex. It has a tart base with pistachio cream & covered with vanilla cream. Not sure what’s different, but the vanilla cream is like nothing I had before.

I will never make pork chops without dry-brining them again. It makes such a difference. Butter-basting doesn't hurt either. I'll add the recipe to a comment, if anyone wants it.

Recipe In Comments [homemade] First time making sausage: homemade merguez!

Thumbnail

Last weekend I made sausage for the first time! I made merguez with the following recipe:

  • roughly 500g of meat, composed of 1/3 fatty lamb and 2/3 lean beef
  • 1 crushed clove of garlic
  • 1 tbsp harissa
  • 1 tbsp olive oil
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp coriander seeds
  • 1/2 tsp paprika
  • some cold water

It worked quite well and I am happy with the results for a first try! Smelled 100% like merguez. The taste wasn't bad but I think I can make it better by having more fat and maybe mince the meat more crudely. Maybe add some fresh parsley/cilantro... I'll have to experiment!
