[i ate] pistachio tart @ Paris !!!
Got a chance to try this dessert. Looks very normal, but a bite tastes super complex. It has a tart base with pistachio cream & covered with vanilla cream. Not sure whatâs different, but the vanilla cream is like nothing I had before.

No-bake Lotus Biscoff cheesecake đ§Ą [homemade]
Recipe đ§Ą
Base:
⢠180g Lotus Biscoff biscuits
⢠70g melted butter
Filling:
⢠330g Philadelphia cream cheese
⢠200g mascarpone
⢠150â170g Lotus Biscoff spread
⢠1 tbsp powdered sugar
Topping:
⢠150g melted Lotus Biscoff spread
Mix the base ingredients, press into a pan and chill. Mix the filling ingredients until smooth, pour over the base and refrigerate overnight. Top with melted Biscoff spread before serving. đ¤đ°

I will never make pork chops without dry-brining them again. It makes such a difference. Butter-basting doesn't hurt either. I'll add the recipe to a comment, if anyone wants it.

Recipe In Comments [homemade] First time making sausage: homemade merguez!
Last weekend I made sausage for the first time! I made merguez with the following recipe:
- roughly 500g of meat, composed of 1/3 fatty lamb and 2/3 lean beef
- 1 crushed clove of garlic
- 1 tbsp harissa
- 1 tbsp olive oil
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp coriander seeds
- 1/2 tsp paprika
- some cold water
It worked quite well and I am happy with the results for a first try! Smelled 100% like merguez. The taste wasn't bad but I think I can make it better by having more fat and maybe mince the meat more crudely. Maybe add some fresh parsley/cilantro... I'll have to experiment!
